Yes, sushi and rolls are fine to eat.
It is likely to be quite unfamiliar for the first time after installation — it will be quite unfamiliar. After eating, you definitely can't do without brushes and a mono-beam brush. Rice, sesame and nori get stuck between the brackets and under the arch, and to clean everything thoroughly, you will have to add +10 minutes to your lunch:)
